Love Spell Brownies

  • 200g dark chocolate (70% cocoa)
  • 150g unsalted butter
  • 200g granulated sugar
  • 100g light brown sugar
  • 3 large eggs
  • 1 egg yolk
  • 1tsp vanilla extract
  • 100g plain flour
  • 30g cocoa powder
  • ½ tsp salt
  • 100g chocolate chips or chunks

1. Prepare the butter

  1. In a large bowl, melt together the butter and dark chocolate until smooth and glossy.
  2. In a separate bowl, whisk together the granulated sugar, brown sugar, eggs, and egg yolk for about 2–3 minutes until the mixture becomes thicker and slightly lighter in colour.
  3. Add the melted chocolate mixture and vanilla extract. Whisk until fully combined and silky.

2. Add dry ingredients

  1. Sift in the flour, cocoa powder, and salt.
  2. Using a spatula or wooden spoon, gently fold the mixture until just combined.
    • Stop mixing as soon as no dry flour is visible.
  3. Fold in the chocolate chips or chunks evenly.

3. Bake the brownies

  1. Pour the batter into a lined 20cm square baking tin and smooth the top.
  2. Bake at 170°C (fan 160°C) for 20–25 minutes.
    • The edges should be set, while the centre remains slightly soft.

4. Cool and set

  1. Allow the brownies to cool completely in the tin.
    • This helps achieve a fudgy texture and clean slices.

5. Optional: Shape into hearts

  1. Once fully cooled, use a heart shaped cookie cutter to cut out brownie shapes.
    • For cleaner edges, wipe the cutter between each cut.

  • Whisk eggs and sugar well
    • Whisk until thick and slightly pale to create that signature crackly top.
  • Do not Overmix
    • Fold gently once dry ingredients are added. Stop as soon as combined to keep them fudgy.
  • Slightly underbake
    • The centre should still have a soft wobble when you take them out for that perfect gooey texture.
  • Let them cool completely:
    • This is when the brownies set and become rich, dense, and slice beautifully.
