Comforting & Cozy Autumnal Breakfasts

Ingredients:

Classic Fluffy Pancakes:

  • 1 1/2 cups (190g) all purpose flour
  • 3 1/2 tsp baking powder
  • 2 tbsp granulated sugar
  • 1/2 tsp salt
  • 1 1/4 cups (300ml) milk
  • 1 large egg, room temperature
  • 3 tbsp (45g) unsalted butter, melted and slightly cooled
  • 1 tsp pure vanilla extract

Vampire Face Toppings:

  • 1/2 cup fresh blueberries
  • 2 tbsp whipped cream for the fangs
  • maple syrup (for serving)

• In a separate bowl or liquid measuring cup, whisk the milk, egg, melted butter, and vanilla extract together until completely smooth. Pour the wet ingredients into the dry ingredients and gently whisk until just combined, be careful not to overmix! A few small lumps are completely fine and help keep the pancakes tender. Let the batter rest for 5 minutes.

• Heat a non stick skillet or griddle over medium low heat and lightly grease it with a little butter or oil. Scoop 1/4 cup of batter onto the hot skillet for each pancake. Cook for 2 to 3 minutes until small bubbles pop on the surface and the edges look set. Flip gently and cook for another 1 to 2 minutes until golden brown.

• Stack 2 to 3 warm pancakes on a plate and drizzle with maple syrup if desired.

• To assemble the vampire face directly on top:

  1. Place two blueberries near the top for the eyes.
  2. Place one blueberry in the center for the nose.
  3. Arrange 5 to 6 blueberries in a gentle curve beneath the nose to form the mouth.
  4. Pipe or dollop two small points of whipped cream directly under the mouth line to create the vampire fangs! Serve warm.

Ingredients:

Warm Spiced Oatmeal:

  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (whole, almond, or oat milk)
  • 1 cup (240ml) water
  • 1 tbsp pure maple syrup or brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp vanilla extract
  • A pinch of salt

Caramelized Cinnamon Apples & Toppings:

  • 1 medium crisp apple (honeycrisp or gala), half diced and half thinly sliced
  • 1 tbsp unsalted butter
  • 1 tbsp brown sugar or maple syrup
  • 1/2 tsp ground cinnamon
  • 1/4 cup pecan halves, whole or lightly toasted
  • 2 tbsp greek yogurt
  • 1 tbsp almond butter or pecan butter (optional)

• In a small skillet over medium heat, melt 1 tablespoon of butter. Add the diced apples and sliced apples, brown sugar (or maple syrup), and cinnamon. Cook for 5 to 7 minutes, stirring occasionally, until the apples are tender, fragrant, and lightly golden caramelized. Remove from heat.

• In a small saucepan, combine the rolled oats, milk, water, cinnamon, and a pinch of salt. Bring to a gentle boil over medium heat, then reduce the heat to low and simmer for 5 to 7 minutes, stirring occasionally, until thick and creamy.

• Remove the oatmeal from heat and stir in the maple syrup and vanilla extract.

• Spoon the warm oatmeal into a serving bowl. Swirl a dollop of greek yogurt into one side of the bowl.

• Fan out the caramelized apple slices along one edge, scatter the warm diced apples across the center, and add a spoonful of nut butter right next to them. Top with pecan halves and a final dust of ground cinnamon over the yogurt and apples. Serve warm!

Crispy Belgian Waffles:

  • 2 cups (250g) all purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 large eggs, room temperature (whites and yolks separated)
  • 1 1/2 cups (360ml) milk, warm
  • 1/2 cup (115g) unsalted butter, melted and cooled slightly
  • 1 tsp pure vanilla extract

Toppings & Garnish:

  • 1/3 cup nutella or hazelnut chocolate spread (warmed for drizzling)
  • 1/2 cup whipped cream
  • 2 tbsp mini chocolate chips
  • 1 tbsp powdered sugar (for dusting)
  • maple syrup (served on the side)

• Preheat your Belgian waffle iron according to the manufacturer’s instructions. (If you don’t have one you can always pre buy the waffles and add the toppings listed!)

• In a large bowl, whisk together the flour, sugar, baking powder, and salt.

• In a medium bowl, whisk together the egg yolks, warm milk, melted butter, and vanilla extract. In a separate clean bowl, beat the egg whites with a hand mixer until stiff peaks form (this makes the waffles super crisp on the outside and light inside).

• Pour the liquid yolk mixture into the dry ingredients and stir gently with a spatula until just combined. Gently fold in the whipped egg whites until no white streaks remain. do not overmix!

• Lightly spray or brush your waffle iron with oil or butter. Pour the batter into the hot waffle iron and cook according to instructions (usually 4 to 6 minutes) until deep golden brown and crispy.

• Place the hot waffle on a serving plate. Dust lightly with powdered sugar.

• Dollop a big scoop of whipped cream right in the center, sprinkle with mini chocolate chips, and drizzle warm nutella all over the top. Serve with a small pitcher of maple syrup on the side, just like in the picture!

• In a small saucepan, combine the rolled oats, milk, water, cinnamon, and a pinch of salt. Bring to a gentle boil over medium heat, then lower the heat and simmer for 5 to 7 minutes, stirring occasionally, until rich and creamy. Stir in the maple syrup and vanilla extract, then remove from heat.

• In a tiny skillet or microwave safe bowl, heat the blueberries with 1 teaspoon of water for about 1 minute until they soften and burst slightly.

• Spoon the warm oatmeal into your bowl.

• Nudge a generous dollop of creamy peanut butter right into the center of the oats. Swirl a scoop of greek yogurt or vanilla custard onto one side. Spoon the warm, burst blueberries all over the peanut butter layer, letting their deep purple juices bleed into the oats and yogurt.

• Finish with a light dusting of ground cinnamon over the blueberries and yogurt. Serve warm!

  • 1/3 cup (80g) pure pumpkin puree
  • 1 tbsp dark brown sugar, packed
  • 1 tsp ground cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1 tsp pure vanilla extract
  • a pinch of salt

French Toast & Toppings:

  • 6 thick slices brioche or challah bread (a day old works best!)
  • 2 tbsp unsalted butter (for the skillet)
  • whipped cream (for topping)
  • ground cinnamon (for dusting)
  • warm maple syrup (for serving)

• In a wide, shallow dish (like a pie plate or shallow baking dish), whisk together the eggs, milk, pumpkin puree, dark brown sugar, ground cinnamon, pumpkin pie spice, vanilla extract, and salt until completely smooth.

• Melt 1 tablespoon of butter in a large skillet or griddle over medium heat.

• Dip each slice of brioche bread into the pumpkin custard mixture, soaking for about 10–15 seconds per side so the bread absorbs the custard without getting overly soggy.

• Place the soaked bread slices onto the hot skillet. Cook for 3 to 4 minutes per side until the toast is golden brown, crisp around the edges, and cooked through in the center. Add the remaining butter to the skillet for the next batch as needed.

• Stack the warm pumpkin french toast slices on a plate. Top with a generous swirl of whipped cream right in the center, dust lightly with ground cinnamon, and pour warm maple syrup over the top and around the base. Serve hot!

  • 1 tbsp cookie butter (like speculoos or biscoff) or caramel, warmed for drizzling
  • 1 pumpkin shaped spice cookie or biscoff cookie

• In a small saucepan, combine the rolled oats, milk, water, pumpkin puree, pumpkin pie spice, and a pinch of salt. Bring to a gentle boil over medium heat.

• Reduce the heat to low and simmer for 5 to 7 minutes, stirring occasionally, until thick and creamy. Remove from heat and stir in the maple syrup and vanilla extract.

• Spoon the warm oatmeal into a serving bowl.

• Using a spoon or small piping bag, drizzle the warmed cookie butter or caramel in a swirl pattern directly over the center of the oatmeal.

• Arrange the sliced banana rounds along the left rim of the bowl. Scatter the finely chopped almonds along the bottom right edge to create a neat crescent. Place your pumpkin shaped spice cookie right on top & serve warm!
