Love Spell Brownies

Ingredients:
- 200g dark chocolate (70% cocoa)
- 150g unsalted butter
- 200g granulated sugar
- 100g light brown sugar
- 3 large eggs
- 1 egg yolk
- 1tsp vanilla extract
- 100g plain flour
- 30g cocoa powder
- ½ tsp salt
- 100g chocolate chips or chunks

Method:
1. Prepare the butter
- In a large bowl, melt together the butter and dark chocolate until smooth and glossy.
- In a separate bowl, whisk together the granulated sugar, brown sugar, eggs, and egg yolk for about 2–3 minutes until the mixture becomes thicker and slightly lighter in colour.
- Add the melted chocolate mixture and vanilla extract. Whisk until fully combined and silky.
2. Add dry ingredients
- Sift in the flour, cocoa powder, and salt.
- Using a spatula or wooden spoon, gently fold the mixture until just combined.
- Stop mixing as soon as no dry flour is visible.
- Fold in the chocolate chips or chunks evenly.
3. Bake the brownies
- Pour the batter into a lined 20cm square baking tin and smooth the top.
- Bake at 170°C (fan 160°C) for 20–25 minutes.
- The edges should be set, while the centre remains slightly soft.
4. Cool and set
- Allow the brownies to cool completely in the tin.
- This helps achieve a fudgy texture and clean slices.
5. Optional: Shape into hearts
- Once fully cooled, use a heart shaped cookie cutter to cut out brownie shapes.
- For cleaner edges, wipe the cutter between each cut.

Key Tips:
- Whisk eggs and sugar well
- Whisk until thick and slightly pale to create that signature crackly top.
- Do not Overmix
- Fold gently once dry ingredients are added. Stop as soon as combined to keep them fudgy.
- Slightly underbake
- The centre should still have a soft wobble when you take them out for that perfect gooey texture.
- Let them cool completely:
- This is when the brownies set and become rich, dense, and slice beautifully.
